Beautiful sunny day

Too bad the boys and I can't go out and enjoy it! They're still in their cones, even. Although, we are going to the vet to get Ramsey's stomach sutures out. Hopefully. They will check the other incisions and let me know how they're doing. They look alright to me. I wish we could go out to the dog park or something. This staying in most of the day is driving me (and them) nuts. But they an't be running, playing, jumping, etc. I even had to pick all their toys up because they can't handle not going all crazy.

I made the most delicious muffins this morning. Chocolate and peanut butter chips. YUM.

Easy Eggs Bendict

Ingredients (based on 4-8 servings):

4 english muffins, split in half and toasted
8 eggs
8 slices canadian bacon (can substitute ham)
1/2 teaspoon vegetable oil
1/2 C. mayonnaise
1/2 C. whipping cream, whipped
1 t. lemon zest
1 T. lemon juice
 1/4 t. salt
1/4 t. pepper (optional)
Prepared mustard

 Step 1: Pour the oil in a medium skillet. Then add 2 inches of water and bring to a boil. Reduce heat, maintaining a light simmer. I like to break my egg into a small pyrex bowl but you can break it into a cup if you please.

I like to make a whirpool with a rubber spatula or wooden spoon and then put the egg into the middle. It helps to keep the egg together more and have a better shape.

Slide the egg gently into the water, being close to the water so you don't break the egg. Poach 1 egg 3 and 1/2 minutes, or until done.

 Pick up carefully with slotted spoon and set onto paper towel to drain excess water. Repeat with next eggs.

 Step 2: Combine mayo and salt in a small saucepan over low heat, stirring constantly, for 3 minutes. Stir in whipped cream, lemon zest, lemon juice; remove from heat and keep warm. (Optional: Add a couple small squirts of mustard for color and taste)

 Step 3: Spread butter on both sides of muffin.

 Arrange canadian bacon slices on each side of muffin.

 Top each slice with a poached egg. (If using pepper, add pepper now.)

 Spoon reserved sauce over eggs.

Cooking Directions

I wonder if I start posting step-by-step recipes on here if anyone would even notice? I would love to do it, but not if I am the only one who sees it. I could share my weekly meal plans, all that type of thing. For example, I made these bite-size cheesecake treats tonight, and I would love to share with everyone (in pictures) how I made them. Maybe they could make them and post a link to their blog of picture or whatever it happens to be so we can share final product photos? Am I too tired, or did that make sense?
Any thoughts?

Pinwheel Cookies

So I am very excited about going to Montana to visit my dad and Sharon. Although, it will be FREEZING (or below) there. Good thing I have my winter coat from snowboarding. I haven't seen him since only October, but it feels like it has been such a long time. And with the cancer and treatment he's going through, I know it's been tough. I feel horrible that he has do this and I am not there to help him. While I am there I am going to make lemon garlic & cheese stuffed chicken, Indian butter chicken (delicious!!), Maple Salmon, and chicken piccata.

I made these pinwheel sugar cookies with orange extract the other day. They were phenomenal. I am getting pretty good at making pinwheel treats. It takes quite a while, what with having to put them in the freezer twice for two hours each, but it is worth it. I might try making my own cookie recipe in the next week or so. Some type of peanut butter and chocolate pinwheel, I think.

The boys' surgeries went very well. Roscoe got lucky, he only had to have the neuter because his canines fell out the day prior to the surgery. Ramsey wasn't so lucky. He had to have his top canines pulled, the neuter, and  they also fixed his umbilical hernia since it didn't fix itself by then. Fortunately, they used dissolving stitches for the neuters, but unfortunately Ramsey's other stitches have to be taken out in about ten days. So hopefully I can get them in on the 28th to check up on the healing and have the stitches taken out. They are so upset with me for 1) putting e-collars on the so they won't lick themselves and 2) not letting them run, jump, play and go crazy like they want to. I had to pick up all of their toys because they can't handle just chewing on them calmly. Here in a couple of days I will be able to put them back down I think. Poor things.

I feel like I had this weird obsession for cow kitchen things. I have two sets of salt and pepper shakers, a spoon rest, a cow lamp (for tealights), a clock with moving eyes, and a sugar/creamer set. I am excited already about moving to our new duty station. I'm not sure when or where it will be, now what will we do there, but we will be at the least renting a house. It will be nice for the boys to have a yard to go out into instead of only being able to run about in the dog parks here (though they are very nice in Fairfax County). Of course our first choice is west coast, but you never know. I would love San Diego, Yuma, Okinawa, Hawaii, or Cherry Point, NC. I would actually prefer Yuma to be a later duty station though because we could work on buying a house. California is much too pricey for us. I don't have that many requirements for our next home (there's obvious things like clean, functioning, and in a nice area). We will rent a place that is two stories, has a gas stove, and a fenced yard. Definitely not too much to ask I think.

Well, I tried that recipe from i am baker last night. For my very first attempt (albeit not being a very artistic baker) I think I did pretty good!

I made a white cake with red velvet cake inside in the shape of a heart. At least it was fun! :)

Superbowl Food

Hubs and I may have an adventure today, assuming my contour doesn't break down. :)

Who knows, I may be home with a brand new baby. That is the plan anyway.

Watch out car salesmen, I am coming and I am prepared!!!

I am so sad I will be working Super Bowl Sunday. For the of course obvious reason that I won't get to watch the game, but also because I won't get to make all the awesome Super Bowl food I wanted to. I mean, look at these! How can you not just want to spend all day in the kitchen?

'Rah For New Car!

Here I am, almost 1AM, and I'm watching Criminal Minds and eating Hot Cheetos. These things are a problem for me; sometimes I just can't stop! Blast you, Frito Lay!

Not the best day at work, what with customers literally yelling at me over prices and WIC things (or rather, non-WIC things they wanted with a WIC check), nor was it the best when my car decided to just die at a red light. Thank goodness I was able to turn it back on.

Haven't heard from Moose yet, not really sure why. 

On the plus side, I was pre-approved for a car loan and can finally get the new car that I want! Yay!

Ahahahaha. I forgot about this picture. It was spring break trip to MT. What a good time. God, I love that guy.

Numero Uno

Ah, the possibilities of a first post. I've tried blogs before, but I always get bored, or forget, or stop for various reasons. I wonder if I can keep it going this time (maybe?). To encourage myself, I may post a picture or two with every post.

My day off of work yesterday was great, but it feels like it was not long enough. I had Tuesday last week off, then I worked W-M and had another Tuesday off. I have some tired feet. But yesterday was good. Fa. and the baby came to the movies with me; we watched The Adventures of Tin Tin. Aside from an older lady sitting in the back, we were the only 3 people in there, which was pretty awesome. I forgot how loud the movies in theaters are.

After we said our goodbyes and I got home, I played with the pups outside for a while and had a late lunch. Then off to our puppy playtime. It was pretty exciting because the boys have graduated to the big dogs' pen. I think for the most part, they like it better. Well, Roscoe definitely likes it better, and Ramsey was okay until other dogs chased him down and kept picking on him, though he would just be sitting there. I had to get them each a new collar and Roscoe a new harness. I just got bigger collars for them about 3 weeks (if that) ago, and they've already grown out of them. I will be excited to get to wherever we're going next and we will have an actual yard. We have a dog park in my complex, but it had become overrun by irresponsible dog owners not picking up after their dogs, so we haven't been going there recently.

The dogs are such divas. They love to sleep in the bed with me. Only, when I get up in the morning, they can hardly lift their heads because they are just so tired and they have been so busy. Sometimes they will sleep until 12, despite me taking them out and trying to feed them (which basically doesn't work in the morning).

So pitiful.
